It's about 10mm. You need to cut them to the size you require, they are clearly marked at 5mm intervals.

Q: Are these bags convex?

These pouches are straightforward ‘flat’ pouches with drainable facility. I am aware that there are convex bags available through Coloplast. I have used the convex bags and they are more ‘robust’ insofar as they are less liable to flex too much (causing leakage) but, at the same time, their rigidity can make them somewhat uncomfortable.
