I love it
Definitely one of the best if not thee actual best vegan cook book I've ever laid my eyes upon. Lovely photos and lots of interesting historical and cultural information. The recipes are all traditional whole foods (that's how I found this book in the first place, because I didn't want a modern vegan cookbook, I wanted something ethnic and old school ie. whole foods) ... there's a Cypriot recipe for fermented cauliflower with wheat flour. I'm excited to try the recipes because I haven't tried any yet. Just reading the recipes has been inspiring though. Lots of new.combinations textures and experiences to be discovered. Super recommend, all around.

Understatement to call it just a cookbook!
This is one of the finest books I have ever owned! I am just beginning to explore this new world of cooking with history, love and faith as its impetus and foundation from a different part of the world. The amount of work involved to create this masterpiece staggers my imagination. It is physically a stunner, beautiful with captivating pictures but it is the writing that has won my heart. I am a Christian vegan so I not only hunger for the good food, leaving animals alone, but also for further understanding God's will for our bodies, His temples as we are told. Thank you, Ms. Hayden and thanks to your Mother and Grandmothers! You are all awesome! Now I'm going to get back to your book!

Love it! Well worth the real estate space in my kitchen! Beautifully written and pics are mouthwatering! I cant wait to make meals for my loved one using these inspiring recipes! Highly recommend!

Beautifully written, stunninnlg recipes
"Nistisima" is a stunning cookbook that shares a great inside into Mediterranean orthodoc lenten culture. The introduction and introducing texts to the recipes give so much knowledge, it's a fun read as well as gives a craving to start cooking.The recipes feel really authentic and although they are vegan, Georgina Hayden always gives options how you might add dairy or even serve meats or fish with the dishes. Since I am not vegan, it is a great addition. I bought this book two weeks ago and I already cooked through 15 of the recipes, made dips and small portions of meze to combine and fall in love with.I highly recommend this cookbook. I have been looking for something to give me a true sense of Greek Mediterranean cooking froever and "Nistisima" as well as "Taverna" (also by Georgina Hayden) really are just that.Tip: start with the Za'atar buns, they'll really surprise you.
