unfortunately disappointed
I was excited to receive this cookbook after reading all the 5 star reviews. However, these reviews must be for a different book. The obligatory science and analysis takes up only about 1/5 of the book and is well written. The book is small sized and has the standard photos to go with the recipes. This is NOT a book of Nordic recipes as I thought it would be, unless you consider hummus, won tons, lettuce wraps and prosciutto Nordic. To me it doesn't make sense to advocate eating the Nordic way without eating actual Nordic food. The book is not a bad cookbook in respect to the recipes, they are easy and so far very good, but this not a good source of recipes that actually reflect eating the "Nordic" way.

I love this cookbook
I love this cookbook! The photography is beautiful, the information is helpful - geared toward low-GI food, but the recipes are a marvel. I've made lunch and breakfast dishes and the combinations were unlike pairings I'd had before but very, very good. If you like dark rye toast with hummus, ham, mustard and shaved carrots (I do) you'll like this cookbook. Breakfasts are simple but filling: cottage cheese, lemon juice, cacao nibs, and apples. It's the cookbook I use the most these days, and as a bonus the kiddos have liked all but one of the meals. I own several Nordic cookbooks and this is my favorite.

Beautiful photos, tasty recipes, and terrific information!
This book is a game-changer. We've been successfully following Keto for a while, but I think that nutritionally we want to have some pre-boitics included in our diet, and this approach seems to offer some viable options. We're going to apply these guidelines to increase eating satisfaction (e.g. purposefully including all five tastes in every meal, etc.) by continuing with Keto's low-carb/healthy fats, while also beginning to include some carefully selected carbs that have a low glycemic load. The hows and whys of eating The Nordic Way are explained with crystal clarity. In addition to the excellent info, this book is beautiful! A full color photo with each recipe... a novice could replicate these dishes. I'm SO glad I asked for this for Christmas!

Powerful new approach to healthy nourishing eating
This is a life-enhancing way of eating and appreciating food. I am already a healthy weight and I thought I ate quite well. This book has been a terrific education. I do eat well but my choices are immensely stronger in terms of long-term health because of what I have learned from this book--after, most crucially, implementing the suggestions.

Interesting Book but a lot of repetition....
I really enjoyed this cookbook....although it's more of a "put stuff together" book. On the one hand, it's got a lot of interesting information about the origins of some Nordic foods and traditions. But, there's also a lot of "things on multi-grain bread" recipes that seem a bit repetitive. As someone who unintentionally make a lot of Nordic based foods (salmon, berries, dill, herbs, etc) this book still didn't give me a whole lot of new ways to make things. However, there were a few sauces and ideas about preparation and storage that still made it worth buying, imo. Also, lovely food photography.

Healthy and Filling Food Without the Guilt
I love this book! Ever since I discovered I am part Nordic, I have been exploring Scandinavian culture. Thus, I purchased this book. I also bought it because I am trying to eat healthier, and it does not disappoint. Forget the fad diets and just buy this book instead- because it has healthy AND tasty recipes in it that are very filling. It is also very educational and includes many recipes with illustrations. Plus if you are anything like me, the excitement of trying new recipes alone will encourage you to keep eating like this. A wonderful find!

Unappetizing photos
I like the concept of eating “Nordic” but the content of this book was less than appealing. For one thing, almost every picture of the food looked as if a meal was torn apart by seagulls. Also, the food combinations sound odd - oats in your omelet and cottage cheese in you ham sandwich?

Would be helpful to have more recipes. Family reaction to recipes tried from this book were lukewarm.

Nordic Way Diet
Not as useful as I had hoped, all the recipes were given but I would have liked to see more general outlines of foods to choose rather than just the ones that were presented in the book.
