Hard telling since rings vary in width & size. It’s worth a try: you can always return it to Amazon if it doesn’t. The box is very nicely made so give it a try!

Q: Can you get this with one slot instead of two?

I assume you can. Contact the manufacturer. I’m sure they’d be helpful.

Q: Can this hold earrings too?

It would depend on the earrings. The opening is designed for a ring so that gives you the approximate size of the slit. I personally would not use it for earrings, being afraid they’d fall out of the box when it was opened. It’s a lovely storage box for rings, as designed: soft, durable, well made.
