Almost same texture as regular pasta
Most times I can not tell the difference from regular pasta. It does take a little longer to cook. I use it all the time now.

A Delicious Wheat Pasta That Can Make Comfort Food Healthier
Good Wheat Single Ingredient Wheat Pasta offers an elbow pasta that is packed full of fiber that can be used in both hot or cold recipes. One order includes six 12 oz boxes of Elbow pasta. The individual boxes are then placed in a simple white cardboard box prior to shipping. The pasta looks just like traditional pasta in its coloring. The manufacturer notes to boil for 14-17 minutes but I found that I needed to boil it for more than 20 minutes to reach an al dente texture. Once cooked, it had a delightful texture and flavor. It tastes like wheat pasta minus the heavy and earthy flavor like some wheat pastas that I have previously tried. I used the pasta to make both macaroni salad and homemade macaroni and cheese. My family noticed the pasta tasted different than my normal go to pasta but they enjoyed it just the same. The difference between Good Wheat pasta and their competitors is that this pasta includes 9g of Fiber per serving. The only ingredient in this pasta is High Fiber Durum Wheat Semolina. It is a filling pasta that makes traditional comfort food recipes a little less guilty. Best of all is how much fiber is included in each serving. The manufacturer noted that one box has six servings. Each 1/2 cup serving has 180 calories, 1g Total Fat, and 9g Protein. The product is Non GMO Project Verified and uses only USA Farm Grown Wheat. When it comes to price, the boxes are similar in cost to an artisanal pasta. It is a perfect ingredient to always have on hand in your pantry to make a quick yet memorable meal. My family really enjoyed this pasta and we already have plans to add another order to our Amazon cart.

Filling; good texture for the fiber content
I've tried a number of whole grain, high fiber pastas over the years, and most of them were not especially enjoyable. Typically, the texture is dense and not much like pasta. This pasta is remarkably similar to white, refined pasta in texture and flavor, although I can't say it's EXACTLY the same. But, close enough.Just some caveats:1. It takes a long time to cook. For me, it was 15 minutes. So, it's not a terribly quick prep. The box recommends 11-14 minutes, but mine was still a bit too firm.2. There's no way I could eat a whole serving of this pasta! The box says a serving size is 1/2 cup dry pasta. I cooked that much and ended up with a small pot of pasta (it expanded a lot), of which I only ate a fraction. Maybe if this was ALL you ate for the whole meal, I dunno. But I couldn't do it. What that means is that the promise of getting 8 grams of fiber and 9 grams of protein per serving aren't necessarily true. I got maybe 2 grams of fiber because I only ate a little bit of the "serving size."3. I eat for the food chemicals more than for taste. That's why I eat real sugar, because fake sugar may taste sweet, but my body wants the satisfaction of sugar chemicals. I'd rather go without sugar than eat fake sugar that doesn't provide the "sugar chemicals." I kinda felt that way with this pasta. My body wasn't really fooled. It wanted pasta chemicals from starchy white flour, and it didn't entirely get that. So my stomach is full, but my body knows it was cheated.That's all.The current price of $20 for three 12-ounce boxes is quite expensive.

Makes perfect Mac and Cheese and doesn't fall apart
We had the opportunity to try several options of GoodWheat pastas and found them to have the texture somewhere between wheat pasta and regular pasta. We figure this is as a result of the much higher fiber content in this pasta vs. regular pasta. That being said the texture of all the GoodWheat pasta we've tried so far is way better than traditional wheat pasta and has a texture somewhere between regular and wheat pasta. Since this pasta has a texture slightly closer to wheat it holds together much better when used in things like Mac and Cheese. The pasta didn't fall apart like regular macaroni does at times. The macaroni had the perfect texture and held together and looked really good when served since all the macaroni were intact. We cooked it for the full 11 minutes as the box indicated and then added in the warmed bechamel cheese sauce. I would say it probably did cook a touch more once in the bechamel but the texture was perfect when cooked as directed.Overall this pasta is really great with the added fiber and the taste/texture that is so close to regular pasta. The only downside is how pricy this brand of pasta is. At almost $7 per a box for 12oz of pasta is a pretty steep but as with most good food, you do pay more for good quality food.

Outrageously Expensive.
The price didn't stop me from buying this trio of shapes 5 times. It's that good. But I am never ever overpaying this company for another piece of overrated starch in a box.I feel like I have been robbed.Good riddance.

Great taste and texture, but quite pricey per ounce
I've tried other varieties of this pasta, and these elbows hit the same mark when it comes to taste and texture. Despite the higher fiber content, this tastes the same as a "regular" pasta, and the texture, while a bit more dense, is just as enjoyable as regular pasta. It's one of those uncommon situations where the "better for you" choice tastes and performs just as well as the "regular" version.As with their other pastas, this is US sourced and has a very clean ingredient list (1 item only -- durum wheat semolina). I also like that the six boxes are put inside of another box for more protection in transit. Unlike most other dried pastas I've received, there was zero pasta breakage or damaged product boxes. The only downside is the price, with these elbows considerably more expensive than most brand name elbows, including organic ones. Still, this this is a somewhat unique item in that it provides a good deal more fiber but doesn't have the taste or texture of whole wheat pasta.4.5 stars. Other than the price, no complaints at all about this pasta.
