I'm Italian. My dad called me his "noodle nut" and these are GOOD!
I'm doing the GundryMD diet right now and so far these are the best alternative I've tried. The texture is really good, the taste is very tolerable, they cook like normal pasta, and I like them a LOT. I will be buying regularly. I'm also sorta kinda at risk for celiac disease from gluten per my DNA...so these are a great alternative for that as well. Try them!

So good!
This spaghetti was so tasty and satisfying! A little pricey but it’s money well spent for the quality of the food. It has limited ingredients and the texture of the spaghetti was satisfying. It’s important to follow the directions when cooking it. Rinsing it at the end is key to making it the right texture.

Tasty, but falls apart if overcooked
We are a family that likes softer noodles, not al dente that are crunchier. I boiled them for 7-8 minutes and tried a couple and the outsides were cooked and rehydrated, but the middles of them were still crisp, so I let them cook longer to soften the way we like our spaghetti. The taste and texture was just like normal pasta to us, it didn't have any noticeably different flavor. The only issue that I had with it, was that when I poured it in the colander to drain, it all broke apart into about 1 inch pieces. I don't think the long noodles can be achieved if you cook it longer than the 7-8 minutes that are suggested, but as we are not crunchy noodle people, I'll save this to use in side dishes that don't require long noodles and don't need to be attractive looking plated.

Purple pasta!! (And it tastes good!)
I like that this is gluten free, and while it does taste a little purple it still tastes like regular spaghetti! This is not in an artificial way, but if you've taste buds that are sensitive to it, anthocyanins do have a distinctive flavor. It's pretty mellow in this spaghetti, despite the intense color which does cook out a little, but you still get a lovely lavender-colored spaghetti.

Purple spaghetti
My granddaughter and I had a running joke that we were going to have "purple spaghetti." After searching for some for quite some time, I finally found this spaghetti. Not only is it purple, but it tastes great, too! She and I both loved it!!
