Fantastic recipes
I don't know what some of the negative reviews are about. The caramel ice cream is worth the price of the book on its own! It's like making your own Haagen Daz Dulche de Leche ice cream. Caramels are great, caramel sauce is great. Also LOVE that she includes weights along with measures. I'm amazed at the number of baking books that still don't.If you love caramel, you'll love this book.

Worth every single penny!
I'm surprised by some of the negative reviews I've seen for this book because I'm very happy with it. It is true that there is no in-depth photographic spread of caramel making basics, but that is easy enough to find online and, once you've mastered them, this book will become an infatuation!I've tried a number of recipes in here and have been happy with them all. The Salted Caramel Buttercream recipe dropped jaws and I made another variation of it by dropping the salt and dusting the cupcakes with the Praline recipe, which is also in this book. The Chocolate Dulce de Leche Pecan Pie will solve all family strife over the holiday table and the Caramel Ice Cream is instant euphoria. Really, this is a great, great book. Caramel really isn't that hard to make it just takes a bit of practice and the reward is baking from this book!

Good for cooking different items with caramel.
Has different subjects for different items with caramel. It's a good book for home cooks not professional. This book doesn't focus on strictly caramels, but it does have a few reg caramels recipes, but its mostly a book of items that have caremel included like cake, cupcakes, mousse, pudding, cookies, tarts.

I was finally able to make smooth and rich caramel for my desserts like I wanted
Caramel was everything that I expected and more! Carol Bloom really knows her stuff when it comes to making and using caramel. I have been trying to make caramel, but it either turned out a little too salty or clumpy. After reading this book, I was finally able to make smooth and rich caramel for my desserts like I wanted. Also, the book consists of innovative recipes that I would not have otherwise thought to use caramel for. I would definitely recommend this book to anyone because it has something for novice to even the more experienced bakers.

Amazing, easy-to-follow ecipes
I love caramel, and this cookbook provided me the wherewithal to give it a try. The advice is solid and the tips are worth more than the price of the book.Whether you have a sweet tooth, or just like to provide people with something that brings out the "wow" on occasion, this little book will do the trick.

delicious looking recipes
I loved the recipe book. It would have been better had more photo's been added, one for each recipe, but overall a well written book. One complaint I have is the addition of corn syrup to the recipes. I know it can be made without and considering that corn is the one of most GM crops and one of the worst offenders in health issues, it would be better to stick to less processed ingredients. The majority of health issues have risen from the industrialisation of food. If we are to indulge, can we not do it in as clean a way as possible... Using, when possible, organic, less refined ingredients.Eggs that are free-range and antibiotic free are much healthy and tastier than those coming from an industrial chicken farm. How about also recommending support of local, small farmers and local flour mills when procuring ingredients. Attending Farmers Markets for often fresher ingredients should have been addressed in the book. These would make the recipes that much more exceptional, knowing the ingredients are truly of high quality, and helping to provide local jobs.Additionally, the recommendation of aluminium was not forethought. Aluminium has been linked to Alzheimer's. We should be promoting healthier choices in our bakeware too. Glass, Stainless steel, cast iron, natural stoneware are some proven safe materials in dish ware. However, I am keen to try the majority of the recipes.

Where's the cover recipe?
I bought the book solely for the recipe on the cover and I can't locate it in the book. Other than that, I've yet to make anything from it.
