When I buy off-brand ginger on Amazon it is usually Buffalo ginger. Buffalo ginger is a different ginger variety that is less yellow, less sharp and peppery, and has a smoky undertone. It is known among herbalists, and is considered to have slightly different medicinal values. But Buffalo ginger is rejected by the big culinary spice companies.This Terrasoul ginger is the kind of ginger you would get if you bought a small name-brand jar of ginger at the grocery store.
