Best knife under $100 I ever purchased
I bought this knife as a gift for my father (he was aprofessional chef for 25 years and he uses his kitchen knives every day). When the knife arrived I opened the package to check it out. After a few passes on my steel this knife was razor sharp and it handled beautifully during a quick "test-drive" in my kitchen. My father isn't overly critical, but I had to make sure that his was a quality knife before I gave it to him because I didn't want him to be stuck using a knife he didn't like out of a feeling of obligation. I couldn't be happier. After one week of use my father said he really likes the way the knife handles (well balanced), and he was pleased that it is a relatively light knife for its size. He also has minor issues with arthritis in his hands, and he finds the cushioned grip more comfortable than the hard handles on most knives.I realize that there are prople that prefer heavier knives, thicker handles, etc.(like me, for instance), but I found the quality and function of this knife to well surpass its cost. For a very reasonable price Schmidt Brothers Cutlery has produced a great knife. Of course, time will tell if this knife will retian a good edge and keep performing so well, but I am confident that the high carbon steel core and titanium coating of the blade should do just fine in this regard.Five stars all the way.

Everything is butter, and better
I am one of those home chef types that is satisfied with most of his tools, but this knife makes me grin ear to ear. It is lightweight, feels somewhat heavy in the handle but has been a workhorse prepping everything (it is used every day). Out of the "hanging package" it is very sharp (as anything claiming to be a knife should be), the soft grip handle is great (though the packaging cord left a permanent dimple in the handle) for wetwork. It will look a little discolored until you wash it before use (don't freak out!). Staying sharp (yes it is), looking sharp (great design, should help those lacking in the "skills" dept.). Awesome value and a excellent step up to quality cutlery for most home users.

Not the best!
All the other Schmidt Brothers knives I own are excellent, but the bread knife misses the mark. Although the slicing edge is a novel design, it just doesn't do a good job of slicing, especially crusty breads. It just kinda slides across the surface. A big disappointment!! To add insult to injury I waited too long to return it!

Beautiful but lacks function
If you're looking for a beautiful decoration for your kitchen counter top...look no further. If you're looking for an exceptional set of affordable knives...maybe shop around a little longerJust received these knives. They came very quick. Washed them up, ran out and grabbed an orange from the tree to see how silky smooth these bad boys would slide through it. NOPE.Every knife in the set was dull. And I mean I couldn't cut myself if I wanted to dull. Luckily it comes with a sharpener (one of the reasons I bought this set). The sharpener is nice. I've spent the last hour trying to get an edge on these blades. For the most part, I've got them to equal quality of knives I've bought from Target that are somewhat cheap. However the boning knife is useless. The initial angle beveled for the blade seems too wide for the sharpener V, so its not actually making contact with the tip and getting the knife sharp.I haven't tried the steak knives, tomato knife, or bread knife yet. I hope they work as it's impossible to sharpen the already serrated edgesLastly, the wood magnetic block is gorgeous...but it's much lighter than the picture shown in Amazon, which is disappointed as the lighter wood wasn't the look I was going forReally disappointed in these knives after all the great reviews I've read about Schmidt Bros.

Superior price/quality balance.
My Global knives were stolen so I needed a set to replace them. I was very very happy with the Global knives I had, and I had them for well over a decade, but the price has really shot up on them. I am a retired chef and can no longer justify spending so much on knives for home use. A lot of home cooks really like to overspend on kitchen tech, these are all the knife you will need and beyond.I saw the Schmidt Brothers knives at a local brick and mortar and liked the look and feel of them. I found a nice deal on them on Amazon during a Christmas special so I thought I would give them a try. I am very happy with them. They are comfortable in your hand, less slippery than the Global. They clean very easy and have a nice balance to them. The cons for me is that they are a bit light, I am used to slightly heavier and prefer more weight. They also don't hold an edge quite as well as the Global's, but better than the mid range to high range Henckels and Wustoff. As a bonus they look very nice and the "block" is much better than what typically comes with knife sets. You wont dull your blade pulling it in and out.

Not perfect, but...
I bought this for relatively large brandywine and ramapo tomatoes that I grow. A lot of higher end tomato knives come in 5 inch sizes or so, which is not big enough for efficient work with tomatoes over about 3/4 pound, and I was looking for at least a 6 inch knife. I like making subs with lots of thin slices, and adding several thin slices to grilled cheese. Overall, a good purchase - definitely better than using utility (non-serrated) or steak knives (serrated and non-serrated) for slicing tomatoes like I used to do. However, it does tend to pull to the right when cutting softer tomatoes like brandywine. I think this is because the serrated edge is more pronounced on one side. It is the best knife for bagels that I have ever tried, and is very good for all types of breads that aren't too wide. The slightly soft, easy to grip handle material is great, considering wet hands are likely when working with tomatoes. I'm not sure the handle material will last a lifetime or anything close, though. I could see getting ten years out of it. Overall, a very good knife, but you have to really be a fan of tomatoes or bagels to make it worth the $30. I am considering, for the $40. +/-, adding the Titan chef's knife to my collection as well.
