This knife is very nice!
It cuts tomatoes so thin you can see through them. It has a feeling where it seems to grab and slice at the same time. VERY NICE

Great knife, bad value
This knife is okay. I'm not a chef, so I don't feel the most equipped to distinguish proper knives apart. I know that it was clean and sharp. Comes with a nice storage box for the knife

Razer sharp, straight out of the box
If there's one thing I've learned during all my 20+ years of cooking, it's that the Japanese knives are unbeatable. They're always incredibly sharp, and this one is no exception. This has become my new favorite in cutting both my sashimi (We do sushi Saturdays, and it works wonders for Salmon, Ahi Tuna, and Tako/octopus.) It slices right through our rolls as well without tearing the nori/seaweed, and breaking everything apart. Here's hoping it stands up to the test of time, just like our ancient, 40year old one!

Amazingly sharp
This is the first Japanese knife I now own and I absolutely love it. It cuts through every and any hard vegetable and fruits like a room temperature stick of butter. Even trimming off thick parts of fat too. Cuts preparation time down to nothing!

Cuts beautifully
I’m always skeptical when I see a high price tag on an item like this, but I can understand why with this knife. It’s very lightweight in the best way, allowing comfort and grip while dicing and slicing through vegetables and meats. I started off with onions and peppers to see how it went through the skin and it cut through like butter, it is very sharp.One thing I will be on the lookout is chips and Nicks and the blade with use and so far there are none!It does come with special instructions on how to care for it so read carefully for preserving this knife, as you don’t want the real wood handle to rot or the blade to rust. So far I would have to agree this knife is definitely well made and worth the money for those who are in the kitchen as much as I am!

Poor quality
This is very poor quality for $200 knife, usually japanesse knives is very strong steel, but i just use for professional sushi only sharpening and honing root already broken the edge, just use for cut sushi rolls, nothing else, very bad

凄すぎ
切れ味が落ちない凄すぎる牛刀ですが何を切ってもスパスパ切れるので怖いぐらい切れます最初は重いなと思いましたが慣れました。刃が長いので使いやすいです。

思ったより軽くて切れ味最高です。購入して研ぐ前にネギ切ってみましたが、サクサク気持ちよく切れます。魚や肉に使ってみます。
