Does not melt if it’s left out of the fridge or if the weather is too hot unlike regular gelatine or even agar agar which both melt. The texture of this is semi tough and is chewy. Think of a texture similar to nata de coco but slightly less chewy. I love purchasing the plain and mixing it with milo, pandan etc
