Are these ok to use with gas stove?

Yes! Gas stove is safe, that's what I have. The heat from the flames does not damage or change the color of the cookware. The heat spreads out evenly cooking things perfectly. The pots are very easy to clean, just a quick rinse with hot water and a simple wash with a soft sponge. They are also dishwasher safe. To avoid damage, like any other cookware, never let the empty pot expose to the flames too long or unattended. For a stir-fried meal, heat it up for a minute on medium-high, add some oil, and start cooking right away. I'm very happy with my set. Truly none stick. The best product in the market.

The Ballarini parma has a PTFE ceramic coating which is a standard coating for many non-stick cookware brands. We are, however, PFOA free.

What is the difference between the gray and granite?

I have the gray and I absolutely love it! This is the best cookware I have ever used. My mother-in-law and daughter have it in gray, as well. We all highly recommend it. Looking at the pictures, to me, the granite just looks lighter than the gray. But, right now, the granite is unavailable.
