Wanted some inspirational ideas being a Chef.This book does what you need from basics to more complex recipes for building dishes from some great Chefs.Won't be buying new books again, bought this second hand at a fraction of the cost! Quality!

The best book for teaching you everything you wanted to know about cooking, from basics to advanced techniques
This book is exactly what I was looking for - a comprehensive manual on cooking, with loads of information and pictorial steps on techniques and the reasoning behind them. This is the best 'teach a man to fish and he'll eat for a lifetime' book for cooking that I've come across, after trying the likes of the Institut Paul Bocuse Gastronomique, which is excellent, but is less comprehensive and aimed more at the gastronomic chef - where this covers pretty much everything for anyone interested in becoming a skilled cook.On a side note, this also seems to include all the content from the 'Knife Skills' book with Marcus Wareing, so if you're contemplating both, just buying this book will cover you.

I have purchased 2 of these books one for myself and the other as a gift. This is a very comprehensive cookery book that covers everything that you need to know about food preparation along with lots of mouth watering recipes. The contents are as follows: Sauces & Dressings , Foams, Stocks & Soups , Flavourings , Latin American cooking , Eggs and Dairy produce , Fish & Shellfish , Japanese cooking , Poultry & Game birds, Indian cooking , Meat , Chinese cooking, Vegetables , Pasta & Dumplings , Asian Noodles & Dumplings , Thai cooking , Grains & Pulses , Breads & Batters , Mexican cooking , Pastry & Sweet doughs , Middle Eastern cooking , Desserts , Cakes , Fruit & Nuts and not forgetting the Glossary.It should be said that some of the ' Know How ' is covered in the MasterChef Kitchen Bible and the different recipes from countries around the world are only 10 pages a piece.A valuable addition for any budding chef to have in their kitchen!

Great big book
I bought a second hand copy of this book from Massive Books. The condition of the book was stated as good and the book I received was the same as a new book after I have used it for about a week. Second hand books through Amazon continue to amaze me.The book itself is large and the paper quality is good. Clear modern fonts and nice quality relevant photographs. Especially pleased that the Chinese section is by Hen Hom, the man of the Wok in the UK for decades. I have only scratched the surface with this book at the moment, but suffice to say it is big, comprehensive and so far seems to be written by people who know what they are talking about!

Beautiful Book
Gorgeous book, very big and heavy, lots of useful information. Arrived later than expected, not a problem as long as it did arrive. Looking forward to using it.

Not really my kind of book
It wasn’t what I really wanted, there was more reading than recipes, infact not many recipes at all. Not my cup of tea but someone else may like this book. Only my personal opinion

Good techniques
I have owned the hardcover copy for years. The kindle edition suits me now. It’s excellent. Great search facilities.probably the best cookbook I’ve ever owned. Great for novice and experienced cooks.
