I think it works best on cutting boards and wood utensils because they are unfinished. I would not use it on finished furniture as it won't absorb into the wood.

Q: What is the viscosity of the oil?

Similar to vegetable etc. type cooking oils, not as thick as motor oil.

Q: Would this kind of mineral oil work for lubricating a pasta roller and cutter set?

It's food grade safe. My understanding is it's used to keep wooden items such as cutting boards, knife handles, etc free from drying out.
