Q: Does this latch the door shut?

Q: Is this adjustable to use with a 2.75" backset or only a 2.375" backset? If not, could I modify it to use with a 2.75" backset?

This pocket door latch is only designed to fit 2-3/8 inch backset door prep.

Q: Where is the strike door jamb to clip in stay closed? Instructions show a pocket but not in the box pls advise

I can't remember if this came with a strike plate. If you wanted a pocket, you'd have to carve one out of the frame. A pocket is not necessary with this unit though, since the piece sticking out retracts into the base. By pushing it up, it will spring out again, so that you can grab it. If it were to come into contact with a strike plate, it would just be pushed back into the unit. This is NOT a locking unit. It is ONLY a door pull. The piece that springs out is only intended to help you withdraw a pocket door it it is fully retracted. In my own case, I replaced a locking unit with this door pull, because the locking unit could not stand up to the abuse it was regularly being subject to. I already had a strike plate installed and there was an existing cut-out for the retractable part that sticks out. I use very strong magnets (along with rubber bumpers) to keep the door closed now (but, of course, the door can no longer be locked).
