Tasty and low calorie. 😋
I finally found a pasta that is low calorie Most pastas range between 180 to 200 calories for 56 grams or 2oz. I love pasta but, its a lot calories which is why I had to be mindful eating it. However not anymore; with carpe diem im able to eat guilt free since it's 110 calories for 56 grams. It's unbelievable, flavorful and cooks well. This isn't fresh handmade pasta. Although it's still tasty and the texture is excellent based on the suggested cook time. It'd worth every penny. As other people have said, be mindful with the higher in fiber intake since it's 24 grams.

Delicious Lower Calories Satisfying Alternative to Regular Wheat Pasta
I rarely write reviews but I wanted to make sure to share how much we enjoy and love this pasta. I tried other high-protein lower carb pasta brands and threw it away after boiling because it was inedible. Carbe Diem is GREAT. It is so perfect for those on a calorie deficit because once cooked the pasta swells nicely and bulks up- it is very filling, and it tastes like regular pasta. We cook ours for about 15 minutes and the texture is very close to a regular pasta. It may be a tiny bit more "Al dente" with some resistance when biting into the pasta. It has a good flavor, like wheat pasta (no strong off-putting flavor like other brands I've tried.) Dry, before cooking, Carbe Diem has 110 calories for 2 oz where regular pasta has 200 calories uncooked for 2 oz. It also has more fiber than regular pasta. Once cooked it plumps up, increases bulk, and becomes very filling. This pasta offers so many opportunities to make delicious lower calories meals that are filling and satisfying. We stay stocked and I cook this pasta nearly daily. As a main dish with veggies and meat for one single adult I will cook two servings of pasta, 4 ounces, and that makes for a decent sized meal.

Yummy and high fiber
Ok these are good good.I’ve been limiting how much pasta I put in my food for awhile and it’s nice to find something with the taste and texture of whole wheat pasta.*one warning *This stuff is delicious AND it has a LOT of fiber.A lot of fiber.Do with that information what you will but enter your relationship with your new favorite pasta gently or you will have…regrets.I need them to do rice next. Cauliflower was never a good substitute for rice.

loaded with 24 grams of fiber per serving
This review is for the ROTINI, and it is the only one I have tried so far. It tastes fine, feels fine, and no one noticed anything off. No issues digestive or otherwise. I tend to consume a lot of fiber, so my gut is used to it. I mean, think about it. This has 24 grams of fiber PER SERVING! Unless folks are mindful of fiber, many dont get that much in a day let alone 1 MEAL, and usually not in one serving. And who eats one serving? So easily 50 grams in a meal using this. No wonder some of you have had gas or digestion issues.I have the box of 3. Each 12 ounce box has 6 servings. The 2 ounce serving is typical of pasta. For those that say that this has same amount of carbs as regular pasta, you are wrong as far as net carbs go. When you subtract fiber, it takes that "total carb" number down to "net carb". Regular past has very little fiber. This is jam packed with it.Sodium content is reasonable. 75 g per serving. Some brands are in the hundreds, some are lower.HOW I cook it: I bring water to a boil, add salt, then add the box of pasta. Directions say to cook 13-15 mins for al dente. I smartly tried the noodles on occasion to determine for myself what texture I want. I cooked until al dente which for me was closer to 10 mins on my gas stovetop. So just pay attention while cooking---as with anything. Not always the fault of the product if it doesnt turn out. When done, I poured into a strainer. I usually run cold water over the pasta, but I forgot this time. It did NOT overcook, and it did not stick together. Then, in the previously used pot I added olive oil, a variety of vegetables (quartered cherry tomatoes, zucchini, onion, sliced red and yellow pepper), and finely cut up leftover (already cooked) hot Italian sausage. Lightly cooked until veg were tender but still with firm bite. Then added in the pasta and a little more oil, salt and pepper, parm cheese, and crushed red pepper flakes.Tasted and felt like regular pasta to me. Husband didnt notice anything either.I bought this for the greatly reduced calories (110 vs 220) and high fiber content (24g vs 3 or less). I cant comment on blood sugar inpact.I had a generous portion and I like that I didnt feel weighed down or sleepy.I dont rate on price. I found it reasonable enough to try and reasonable enough to buy it again. I will likely go with the rotini again, but if I try another pasta shape option I will add my thoughts.

Tastes like regular pasta to me and that's a good thing
I must have tried every alternative pasta on the market. When I saw this and the low-carb numbers, I had to give it a try. I was pleasantly surprised. It cooks up like regular pasta but does take a little longer. I would say 13 to 14 minutes to achieve al dente texture. I made some mac & cheese with it and if someone had told me this was regular pasta, I would have believed them. My only beef is that it is expensive for pasta but items that are out of the norm usually are. I'm sure my A1c will like this very much!

Low-Carb Treasure!
It's still 15-20g per serving, but it DOES taste just like the illegal stuff (for us low-carbers). I think the cooking length question is a valid one. The spaghetti and elbows were fine, but the penne needs more time. Other than that, it's still a great choice, provide you can stay within your daily carb allowance.

Great Taste!
I love pasta and have been looking for a lower carb pasta and decided to give this a try. I love the taste! The cooked texture is a bit firmer It's a little bit chewier than regular pasta. I have used the spaghetti and the elbow. I've used it with spaghetti sauce and have used it with clam sauce. The sauce doesn't cling to this pasta like it does with regular pasta. Regular pasta tends to absorb the sauce, but this does not. I like that. It also makes a great pasta salad. It freezes very well. I just heat it up in the micro, right from the freezer, and it's good and firm. Give it a try.....I like it and would buy again.
