Simple but delicious complete meals
I own almost all of Ella's books because I love her cooking style. I almost didn't get this one after reading some negative reviews but am so glad I didn't listen to them.Pros1- ingredients are simple to find and items a decently stocked vegetarian kitchen would already have on hand2- no fake ingredients3- beautiful pictures4- the meals are complete - it's only 75 recipes, but each one has the sauce and sides included so in reality it's more5- she repeats a lot of ingredients so you don't have to worry about buying a jar of harissa or miso or bag of peas and not knowing what to do with the leftovers6- most importantly, of the 6 I've made so far, they are all super delicious!!7- while there are a small handful of smoothie/dessert recipes, most are hearty "real" recipesCons1- some recipes do take longer than 30 min (and I've been cooking 20+ years)2- most are written for 2 hearty portions. This is easy to double for leftovers or more eaters but mildly annoying3- minor point but the organization of the chapters is a little silly to meI'd say every recipe could easily be made gluten free.

Love the plant base recipes!
It’s a great cookbook for families that are now starting their plant base diet. I don’t know if I consider myself a vegan yet, but I do like her simple recipes in the book. I also have her app, but use the cookbook on my kitchen counter more frequently.Recipes are fairly easy to follow. I’m a fan of the effort she took to make these dishes for families like us that are now starting our plant base journey.

Very inspiring with some stand-out recipes
This book did NOT disappoint, which is good because I own so many veg cookbooks!While the recipes are pretty simple and uncomplicated, many may take a bit more prep time than the 30-minute claim but I am ok with that. I am admittedly a slow cook. If you clean and prep your veggies ahead of time, I am certain that the 30-min. timeframe is likely achievable.There are two recipes I've made multiple times already--the 15-minute dhal and the pasta with pan-fried mushrooms & sage, the latter which me, my husband and young daughter love (my 6-yr old cleans her plate when I make it!) I've made the overnight oats with blueberries and peanut butter multiple times already (both hot and cold) I enjoy adding cinnamon and some chia seeds to mine and some Deliciously Ella Maple & Hazelnut granola on top. Simple but delicious! I've also made the toast with mashed butter beans & avocado for breakfast or lunch and I love the texture and nutrition profile. I do think I would benefit from the optional pesto drizzled over the top next time (which I didn't have on hand at the time)One con is that many of the servings are for 2 people, which is annoying. That said, I've gotten 4 servings out of *some* of the recipes claiming to serve 2 (and I eat generous portions) This, along with the fact that I am unable to prepare the recipes in under 30 minutes made me refrain from a 5-star rating. That said, for my purposes this is a VERY good cookbook. Recipes ARE simple and I find it very inspiring with lots of beautiful photos of the food. Again, some of my new favorite recipes on regular rotation come from this book. I own Ella's 'Quick and Easy' book and love this one just as much and yes, this one does contain even more streamlined recipes. I've followed Ella over the years and the recipes have gotten more and more delicious over time. The DE brand is aging well--must be all of those plants ; )

Excellent Cookbook - Simple and Easy
I love that the ingredients list is short and these meals take 30 minutes. Plus you can easily add portions for meal prep. Definitely recommend if you’re trying to add more plants to your diet.

Delicious and easy
I’ve tried 5 recipes from the book so far and each one has been delicious and easy. My fiance and I are not vegan so many of these ingredients are not just stocked in the kitchen and my only complaint is some of the ingredients are a bit pricey but the portions are very generous so I think overall it’s still a good value. Love this cook book!

Easy recipes, great index
I really enjoy cooking and cookbooks; this is an approachable and nicely photographed cookbook of plant based recipes. I also have a really busy life and not as much time to cook as I would like! I love that these are practical, easy recipes. I also really appreciate the index that includes ingredients, so if I have something I want to use (say, kale) I can find several recipes to make us of it easily.

Nice
Well written, nice and fairly easy recipes. I omitted a star for two reasons: 1) even though I'm a proficient home cook, I've not found her time allotments to be accurate 2) cilantro in SO many recipes. I'm one of those unfortunate people who tastes soap when consuming cilantro. I realize I can omit or sub but that doesn't always work. Oh, one more thing. In my opinion she uses an absurd amount of olive oil.

Great recipes; healthy and tasty
Good selection of recipes, all which have clearly been tested properly. No hard to find ingredients making this a great book for the home cook who wants to have a more vegetable-forward diet.
