Excellente synthèse de la connaissance scientifique sur le métabolisme et la nutrition
Ce livre est extrèmement précieux car il passe en revue le fonctionnement du métabolisme et remet en cause beaucoup de mythes et croyances sur l'alimentation et la pseudo-science de la nutrition. Ce n'est pas un livre d'opinions mais un condensé de la connaissance scientifique sur le métabolisme. Ce que j'aprécie le plus c'est la démarche scientifique (réf aux articles scientifiques), l'analyse commentée de certains papiers et la démarche sincère de l'auteure.

This book is a paradigm changer for the food industry, for us unsuspecting food consumers and ultimately for our physical and mental well-being.
