The base of our salts is the precious white salt from the sea marshes on the coast of Mesolonghi. It is considered to be the caviar of sea salts, available in very limited quantities. Mesolonghi salt is 100% natural, unrefined, rich in natural minerals, and harvested using traditional methods. This delicious sea salt is blended with a selection of the finest exotic natural rock salt flakes from around the world, each with their own unique flavours and characteristics. Rock salts are mined rather than evaporated, mineral content is very rich, the crystals are substantial and often coloured. Hawaiian salt is harvested on Kauai island - the only source - and the red colour comes from the iron oxide-rich red volcanic clay, called 'Alaea'. Red Hawaiian salt is said to have the highest concentration of trace minerals and elements of all salts. This red clay imparts a subtle, mellow flavour to the salt. However, because clay and salt will separate in water, this salt should be mainly used as a decorative and finishing salt.
