I learned the hard way so you don't have to. Stainless MUST be preheated on medium before applying oil and food. AFTER PRE HEAT. I pour a thin even amount of oil, After that sub 60 second prep process, it's all good from there including cleaning. The first time I got, I didn't pre heat, then used too much heat, over oiled. It was a sticky mess. After learning the prep method, I made the same food. The difference was excellent from prep to taste to clean up. There are no rivets or screw heads inside the pan suface so it's easier to clean. Handle attachment feels solid. I feel these pans are disciplining me to be a better cook in respect to temperature, oil use, and knowledge of materials. For camping, propane use is more efficient now that I know I don't have to torch things. The handles can also be unscrewed for more portability. So far, carne asada, eggs, arepas, and cut potatoes have been cooked. All had a pretty easy clean up. The 9&11 inch pan set is under $40, the best deal in the options. Spend the moment to prep, use the right heat, and they will be shiny, ready, and dependable for you.
