Ideal Flour
A neighbor of mine started using French flour because it Europeans ban ingredients that are used in American flour. Also, American wheat is picked before it ripens to maturity, so we have autoimmune responses to domestic flour. First, I made cookies, which came out great. Then, I made Irish soda bread. The flour was wonderful. I can use it without worrying about health damage.

Delicious fine flour
I bought this flour to replicate Dominique Ansel's madeleine recipe. My results have been perfect every time - super light and fluffy. Airy, cakey and sweet. I use Bob's for everything else but this will be my go to for my madeleines and waffles.

I used it to make my homemade turkey gravy for Thanksgiving. It was recommended to make the roux with pastry flour so it would be silky smooth. It did that job nicely. I would buy again.
