Kai Shun 15cm Utility Knife DM-0701

Best utility knife I've ever used. Razor sharp so care needed.

Amazingly sharp knife, I mean really sharp. Beautiful to look at, nice to hold. Used more for delicate foods. The edge has a slight tendency to flake (chip) if you get too aggressive when sharpening. Don’t use anything more course than a 2000 wet stone.

An excellent product. Only issue is that I'd have preferred a slightly shorter model as it is a little unwieldy.

Very sharp, very light. My wife prefers this brand to the Tojiro Senkou knives I have as they are nowhere near as heavy and have a smaller handle that she finds easier to manage.
