Can this be used on a gas hob? Is it good for omelettes, as buying specifically as an omelette pan? Thank you

My hob is electric but I'm sure it's fine for gas too. I make omelettes in it all the time and it's great. Very lovely if you like rustic pale blue vintagey items too.

Is it non stick enough to get good omlettes and frying eggs?what materials are used and is the surface scratch resistant

Definately non stick enough for omelettes etc. I think it's made from enamel. It's the old fashioned type of pan that you'll probably have for like 50 years
