■ What are Cacao Nibs? Cacao nibs are cacao beans that have been roasted, separated from their husks, and broken into smaller pieces. Cacao nibs have a chocolatey taste, but they're not quite as sweet as chocolate, which can make them more versatile. The texture is unique-crunchy yet tender, like a macadamia nut, with the mouth-cooling properties bestowed by the magical substance that is cocoa butter; and complex, with a bitter cocoa flavor.
