I recently discovered how to make vegetarian Kimchi, which is a fiery fermenting broth of Chinese cabbage and other vegetables, one of which should be daikon. Unfortunately daikon is not readily available in our neck of the woods, so I previously used finely sliced English radishes. Well now I can add dried daikon to the fiery fermenting kimchi and over time it re-hydrates perfectly well. It can also be used in several Japanese dishes that I am learning to create. Yummy!

Enhance the soup
This somehow enhance the taste of the soup I made. You need to soak a handful and chopped into small pieces. But some people like it as is. Slightly crunchy despite cooking. Lovely

Buy the bigger bags and quantity
I think it's soooo good you will want more and kick yourself, like I am for not buying the larger quantities from the same seller. It's great, but....When you open the bag.... Yikes, it's like a bad fart! Smacks you in the face. That is the only downside.

Lovely delicate flavour
