Is it a non-stick surface?

Yes it is a non stick surface but my first cookie if the batch typically stick anyway no matter what pizelle iron I'm using. This particular size is wonderful for a cookie exchange.

Are you able to easily roll these smaller 3" cookies into cannoli shells or are they too small?

They are rather small, but you can if you use a chopstick
