Not for professional sharpness
Wouldn’t recommend! I thought i could easily sharpen my knives quickly! To a high level of sharpness! The same as my stones! Not at all ! In fact it made a few of my knives blades blunter !

This is a fast efficient way to put some extra life into an old knife. I'm certain there are far more advanced ways to get a perfect edge on your knife, but if you're just looking to improve an old budget kitchen knife, it does the job well. Getting a super sharp edge takes lots of time and effort... this tool will get you a fairly sharp edge in minimal effort.

I already own and use the regular (white) 20 Degree AccuSharp. Which works great. But doesn't finish the job! To finish the job, I use a Lansky (or a knock off) to take the burr off (first step), then the white ceramic honing rods to polish the edge to get it near razor sharp. I purchased the 15 Degree (Black) AccuSharp to sharpen a thin blade knife got good results. So then decided that my Echo knives were thin enough blades to put a 15 degree edge on. It takes a few more passes, because you have to remove more material. But the end result is a sharper knife. Now, I'll have to see how long it holds that edge. Oh Yeah. I had to put a spacer under my turn box, to get my honing rod to 15 degrees, which as I said before, finish the job of sharpening a knife.

I'm very impressed with how well it worked. I own a 30 year old set of Wusthof knives that were originally sharpened at 20 degrees. It took about 20 passes to get the angle of the chefs knife to 15 degrees, but they are very sharp now. Follow the instructions and you don't need to press hard. I've read that Wusthof now recommends 14 degrees and 10 degrees on asian knives. 10 slow passes on the serrated bread knife made it very sharp as well.
