I order Ube after watching a video about cocktail making. Let me just say that I am wanting to explore new tastes and unheard of foods. In making a particular cocktail, it was recommended to use a few drops of Ube. Having never heard of it before, I said, "why not?". I ordered a small bottle--OH MY, what a pleasant surprise. It is sweet but not sickeningly. It tastes of vanilla and mildly like a berry. The flavor and smell are familiar but new, meaning not necessarily identifiable. In an average cocktail, you use only a few drops. The quality is superb. And, they bottle many other tastes and extracts. My next move with it is to try it in baking or cooking.

I absolutely love the nutty flavor this has. A little bit goes a long way and I only use about 5 drops in my iced coffee. The flavor is totally addictive! I make a homemade version of Vietnamese coffee and whip it up with coconut milk and pour it over ice. Delicious!

I was really excited to try this for a uber butter mochi recipe but it didn’t live up to expectations. The flavor tasted very artificial, and not like the rich, nutty ube I’m used to. It had a strange aftertaste that made me hesitant to actually use it in the final recipe. The color is a very deep purple and it stained pretty easily, which was another drawback. I ended up omitting it entirely because I didn’t want to risk ruining the flavor of the butter mochi. I appreciate the idea behind a convenient, water-soluble ube extract, but this one just didn’t work for me. Maybe it’s better suited for drinks or something less flavor-sensitive, but I wouldn’t use it for baking again.

An easy was to make Ube drinks and add to baking. Very concentrated!
