Best knife sharpening kit I’ve ever owned
Fantastic product. I now have the sharpest knives ever, no more tests of my skill using a whetstone. Set the angle for your particular style of knife - and work the knife across the wheel using the guide. Perfect. Expensive but I’m hoping it lasts a lifetime

Great bit of kit.
Too be honest it may not be within budget of average home. It’s not cheap, let’s say it like it is. But for a variety of knives it’s a great, super sharp solution. Will last for years. It’s a sharpener for keen cook, and or knife enthusiast. I’ve been a caterer for 50 years. Have this at home for my own vast collection of knives. Buy once, buy right you will be happy. This will last your whole life, keeping your top quality knives in perfect condition. Im very happy with it.

Be patient
If your knives have been neglected for a while or sharpened using cheap sharpeners, it's going to take a while to get them back to the correct angle. Don't expect to rejuvenate knives with a couple of passes, no sharpener is going to do that. Practice on an old knife you don't care about to get familiar with the machine. Once you've got the hang of it (it's really not difficult) you'll be glad you made the investment. Once your knives are sharp, it'll only take a few passes to maintain them. Very wise purchase that'll last a long time.

Stick with it for best results
I've lived with this sharpener for a week now and my first impressions were not good. So, I watched a couple of YouTube videos on how to get the best out of it and realised that really dull, neglected knives need a lot of work. But once you've put that effort in, wow! My wife bought me a set of Wüsthof knives a few years ago and once they lost their edge, no matter what sharpener I tried, I just could not get them back to how they were when new. I tried all kinds of different systems including the Ken Onion edition Work Sharp, but nothing came close. I was going to indulge in the T-2 version Tormek, but the price put me off so I thought I'd give this a go. So glad I did. Unless you're working in a pro kitchen environment, the T-1 is perfectly adequate for home use. The key to getting a really sharp edge is to keep going on the grinding wheel until you get the bur on the opposite edge of the knife. It's pointless sharpening the other side until you get this and it's very easy to feel (and see under LED lighting). Once you get that, do the same number of passes on the other side and keep going from side to side reducing the number each time until you do one pass each side. Then use the honing wheel. I also bought the BACHER Premium Leather Strop which gives you the final polished edge. I highly recommend this item.

Expensive, but brilliant results.
- Very happy with the results. I'll generally only dig it out three times a year or so. For an interim tarting up of an edge I'll just use a steel. - Small thin blades like paring knives don't fit well into the guide, and it's easy to inadvertently snag the felt lining. - Using the marker to determine the factory angle is just too faffy. I've decided to cut the nonsense and compromise on a 17.5 degree edge angle regardless of the type of knife. The consequence of doing that is that it can take a while to generate a burr but the advantage is that it's quick going between knives from then on. - Using the honing wheel needs care not to round off the edge- since the wheel surface is obviously curved you need quite a shallow angle to hone. - The magnet is a PITA to clean up. Using the tool for several knives makes a bit of a mess around the base. - Knife sharpening is theraputic. You see the results of your labour in paper confetti you've used to test the edge and put them away with knowledge of a job well done. - Wife complains that knives are too sharp. She chooses inappropriate knives for the task at hand- usually too small with a flexible blade and small handle for jobs which should have a larger blade for control. Knife control is uber-critical when using a decent knife with a well-cut blade edge. Trying to teach a 50-something woman that her kitchen skills aren't up to par will only result in spilt blood- one or the other. Getting grumpy that one of my knives has just been wrecked by carving a joint on a metal roast plate is an exercise in futility. Seriously expensive, but a great piece of kit. I've got rid of the majority of my other sharpeners!
