The skin as well as the small vertebrae are edible. The skin is so thin that it can be eaten without any problems. The vertebra is also edible and contains many nutrients. But who likes can of course also remove the vertebra and solely consume the fish meat and the skin. Any possibly present oxygen absorber is not suitable for consumption.
