Is this made in Japan? What is the steel used?

This knife is made in China according to the standards and style of a traditional gyuto Japanese knife while also incorporating refinements to enhance the knife, such as the full-tang design not usual in a traditional Japanese made knives. We chose to use a kitchen grade 420HC German stainless steel for its high corrosion resistance and balance of hardness (RC 56-59) for edge retention and ease of re-sharpening.

Has anyone ever used this in the preparation of sushi? If so, how did it perform? Thank You!!

don't do sushi...but have no doubt this would blow you away. I have used it in every other way and it is everything it shouild be , and more. I am a great fan of Japanese steel and this is everythig it claimed to be..order a "WHETSTONE" to sharpen it if it ever gets dull....just a great knife.

Oh and another question please, do you offer this knife in a left hand version?

I am glad you asked! Although most the people in the world are right handed and only 1 in 10 are left handed, we do want to make our products available to everyone. With that being said, we do plan to offer our knives in left handed versions. We are currently discussing how we can provide this variant and although we do not have an estimated time of when this will be available, we have it at the top of our list. What are the dimensions of the blade?

The knife I have is 45 mm (1.77 inches) from spine to edge at the base of the blade and 199 mm (7.83 inches) from the base of the blade to the tip --- and sharp as a razor straight out of the box.
