Having enjoyed cooking with another knife (Santoku DM-0702W) from the same range Shun Classic White, I decided to get this utility knife. The item arrived in good shape. No damage. Before use, I tried cutting some sheets of paper. To my amazement, it let me make a trail of S shapes. This is excellent. No matter how beautiful it looks, if a kitchen knife fails to cut newspaper smoothly, the knife is no use. The utility knife's blade sinks without adding any extra force on grapefruit's skin and into segments, not to mention tomato. In addition, the pakkawood grip is a lovely feel and stays in my hand without slipping. The white-ash coloured finish also lifts my spirits in the kitchen even if my cooking turns out a failure. Another big reason why I prefer this range is because of the chin that is curved without a blade to prevent an accidental stab or cut. I would often make a cut at the bladed angle chin of another model from another manufacturer. With a regular maintenance by whetstones, this will keep its excellent cut for ever.

È il secondo Shun di Kai che acquisto, sono un cuoco amatore ma direi che il mio livello di esperienza in cucina è piuttosto alto per cui ero alla ricerca di un coltello che mi permettesse di eseguire lavori "di fino" ma anche la necessaria versatilità senza dover cambiare lama ad ogni passaggio di lavorazione. Questo coltello "petty" è non solo molto affilato (e appuntito!) ma è anche molto maneggevole e inoltre ha un'estetica meravigliosa. In mano dona la sensazione di un vero rasoio pronto a incidere, spellare, disossare volatili e sfilettare pesci di dimensioni ridotte. Da avere, dopo aver acquistato il Kiritsuke o il Gyutoh sempre Shun, con i quali forma una terna perfetta!
