Can this be hooked up to my denon surround receiver

You can use this for one source (i.e. CD player) on any receiver that has inputs. You would just run the RCA out from the source to the spectrum analyzer, then the RCA out from the analyzer to an input on the receiver. Ideally, you want your receiver to have pre-out and pre-in connections, where you would run the pre-out to the spectrum analyzer, then spectrum analyzer's out to the receiver's pre-in. Then it would work for all sources inputting to the receiver.

If this device is switched off, is the audio signal still passed on?

No, the device passthrough outputs turn off too. Best you can do is turn the sensitivity all the way down and leave it on if you need the passthrough.

Item shows choice of green, blue and white leds. can the led color be changed?

No, the lights cannot be changed. You would have to buy a unit that comes in that color. The only things that you have an ability to change are the brightness and sensitivity.

Can you switch the display between left and right signals? Or would I need two of these to monitor both left and right signals?

The PP-31 mixes the two inputs down into one. There is no switch to display each input separately; you'll need two PP-31's to do that.
