I have made a couple things from the cookbook so far and liked them. Our diet is very limited and its awesome to find things that taste good, not just edible, but good. The coconut macaroons were great (I flattened them like cookies) and the butterscotch pudding is great too.

Great!
So far seems like a really great cookbook, larger and more recipes than I expected. A little thrown by the vegan portion like another person but guess we just need to read the description a little better & reviews. Glad it is gluten free though, an added bonus I wasn't expecting. Also a little surprised at the smaller amt. of coconut flour but not that much since I know a little bit about cooking with it and don't mind the chickpea flour, also nutritious I think.

Excellent cookbook & also tremendously educating
I saw this at the library and I had to have it. Very easy to read and follow the recipes. Offers a lot of variations to recipes. One of the nicest cookbooks in my collection.

I love this cookbook
I love this cookbook! I've always loved coconut and never had any idea how versatile it is! These recipes are healthy, easy and very good--what more can one ask for? :-)

It seemed like I recall reading a review that said this book ...
The book was quite disappointing to me. I am on the Specific Carbohydrate Diet and was looking for recipes that would use coconut flour a lot. Most of the recipes that I have looked at so far do use coconut flour, but only a small amount. They also use chickpea flour, potato starch, psyllium husk, which I cannot have. It seemed like I recall reading a review that said this book was good if you were on the SCD, but it is not.

The recipe worked
I've tried all sorts of cooking trends. This one challenged me since some ingredients are not on all grocery shelves. The author does suggest how to make-do ( full- fat coconut milk will yield coconut cream if you can't find it on the grocery shelf.) The Panna Cotta recipe on page 295 came out great. Had to get the agar-agar in a health food store.

Decent Recipes
Cooking with coconut as replacements for flour, sugar, etc. takes some getting used to and the end products are never as good as the original, but most of the recipes in this book give you the closest analogs to real bread, muffins, etc. as you can get without eggs, nut flours, and dairy. Overall, I recommend this book for anyone on elimination diets.

Really complete book looking forward to diving into all the recipes but will have to search out local supplier for ingredients.

There are several recipes in this book I’m going to try, they all look delicious and simple, very pleased, bought a second book to give to my daughter-in-law who suffers food allergies

Oh. My. Goodness. So many amazing recipes and they all taste sooooooo good. My omni friends love trying these dishes and some may even eat more veg because of this cookbook. Easy to follow instructions. Easy to find ingredients. As vegans you’ll likely have most items in your kitchen already. Enjoy.
