A helpful cookbook from a Dave Ramsey enthusiast
This cookbook provides 72 recipes for rice, beans or a combination of the two. Monique Harps wrote the cookbook after hearing the financial advice that eating "rice and beans, beans and rice" could cut food costs and help with finances.Don't look for number of servings, calories or time to prepare - the cookbook contains none of that. But it does contain ideas for sweet or savory dishes and desserts (cookies).It would have been helpful to organize the book into sections - appetizers, main dishes, desserts. I don't know what to do with some recipes, for example Texas Caviar. Is it a main dish? Side dish? Served hot or cold? Not sure.This little book is sure to expand your horizons. Who knew so much could be done with the ingredients.

Canned beans only
Good recipes, but if you have or are planning to lay in 50# of dried beans and use this book, you will need additional knowledge. The recipes seem good though, so the more the merrier.

Uses too much processed food.
I skimmed though the recipes, but the only way I will make any is by making substitutions. Too many ingredients are things like cream of whatever soup, jar of alfredo sauce, can of Enchilada sauce, frozen biscuits, package Country Grave mix, package Taco Seasoning mix, etc. I was looking for recipes from scratch.

Inventive. I wouldn't have thought of some of those. I was disappointed that it used cans of beans and didn't have directions for how to cook dried beans or how to cook rice which I just learned from a different book. I'm looking for some new whole foods plant based ideas so some of those I won't be using but overall pretty ok.

Very tasty recipes for people on a beans and rice budget! (Or for people who just like to eat beans and rice!)
I'm not the greatest cook and my husband is a foodee. This book has lots of fantastic recipes in it and has helped keep us on our beans and rice and out of restaurants! Kudos to Ms. Harps for her creativity and her delicious recipes! I had many of the ingredients already in my cupboard.

Great Cookbook
This is a great cookbook - just a warning though it is not exactly cheap meal planning. The recipes are great though!

I really enjoyed recipe #43! The thoughtful way that it's structured, each individual step. The flavors really build on each other! I'm on baby step number four on my path towards financial freedom.

Looking for a Beans & Rice cookbook, keep looking
One of the worst cookbooks I have ever purchased and the author appears to have not put much effort into it. Many ways to prepare beans, but most recipes have very low appeal!
