This one is great for EVERY kitchen.
Yeah, I know. Who doesn't know what to do with rice, right? But you'll be surprised at all the ideas & variety you'll get from this book! Not another one of those books that has ingredients that are fancy smancy & can't be found at the local store or costs a small fortune. This is a keeper no matter how much you think you can do with rice. Keeps the food budget reigned in without making you feel cheap. Easy to get everyone to eat more veggies without feeling like they are. Great book.

This is a totally vegetarian cookbook!
I figured out about halfway that this cookbook had nothing for me. It's 100% vegetarian -- ALL vegetarian, no eggs, no normal milk, no meat, no meat stocks, nothing good. Her idea of making stocks is to use vegetable scraps such as onion skins, kale ribs, carrot heels. Hmmmmm. I make a lot of stock and broth, but my broths have good things in them, such as whole chickens and the good parts of vegetables.This is mostly a book about what NOT to eat -- it's full of remonstrances, such as don't eat GMO, only buy organic cans of beans, and they should be labeled BHP -free. Don't use tap water. She writes negatively, such as the many, many rules of etiquette for what never to do with your chopsticks. I personally believe that if someone can't just ask for a fork, they'll have to put up with the foreign criticism. This is not just a thoroughly vegetarian cookbook, it's a heavily Japanese cookbook. I winced at her attempt to remake a few favorites from the American South with weird ingredients no one ever heard of in Tennessee or South Carolina. No meat or meat broth, of course. Or butter, or pork fat.The cooking times were useful, the catalog of rices was useful because I found some neat rice mixes on Amazon. One recipe struck me as a good idea: mixing pumpkin in with a rice mix. She had it with sweet spices for breakfast, but I want to work it up for a supper dish; we grow a lot of pumpkin.I think they should warn people in advance that this is a SEVERELY vegetarian cookbook. I bought it in good faith as a normal cookbook, because nowhere do they warn prospective buyers about it being limited to weird ingredients and no animal products of any kind. So I can't use it and am sorry I bought it. And after 2020 I don't want any more of the "Don't do this, don't do that!" that way too many people got into during the epidemic. And here's a whole cookbook full of that.

Hurray for Brown Rice !
Because I have to eat only brown rice now, it was such a treat to see a book like this with so much information about the types of brown rice and the history. Who knew that brown rice could be so interesting. I love this book with its beautiful pictures and a LOT of really good information. I dont even miss white rice anymore after reading "The Big Beautiful Brown Rice Cookbook"

Excellent brown rice cookbook
I bought this book because I think Wendy is a good chef. I would recommend this book to everyone, especially to vegan/macrobiotic cooks, beginning and advance people wanting to learn how to cook brown rice in a variety of ways!

Wendy Esko is THE expert for everything related to brown rice!She worked on books with Aveline Kushi and she has come a very long way since we first heard of her decades ago!Thank you so much Wendy for these GREAT recipes and new ideas. And thank you for keeping us healthy and happy.Natalie;)
