Once again, the old ways are best
I didn't buy this on Amazon--I didn't even know these existed. Rather, I stumbled upon it at a local ranch supply after throwing away all my totally useless knife sharpeners and looking for a simple stone. I found it here on Amazon when I recommended it to a friend and wanted to see if I could find a source for him (he doesn't live in my town). I see other reviewers have downrated this unit for grit size—I know nothing about that. And I agree with one review that said that it leaves dust after sharpening: it does. Nevertheless, it WORKS, and well! My old knife sharpeners were all garbage. I purchased a top-quality chef's knife a few years back—first quality knife I've ever owned—and when the edge dulled, none of my knife sharpeners could give me back that edge. This unit did! We're talking shaving-sharp. If there's such a thing as "sharpness rays", this will create them. Okay, maybe the other reviews have a point and there are better sharpening stones. But from now on, when and if this one wears out, I'll replace it with a STONE again: never, ever will I buy a "knife sharpener" again. I've had three, including a "professional" electric one and all went in the garbage. Heck, people used to sharpen swords and knives with rocks: that should tell us SOMEthing.

Like sharpening with chalk so much stone removed with each stroke. Found large granules in the stone.

The "fine" stone is basically a soft red brick that wears down quickly.
These are poor quality and the "fine" stone isn't very fine. It's basically a red brick that wears quickly.
