This product was used for a special Japanese dish and takes a while to cook but is a unique item for the dish and I am glad to find it available on amazon.

These lotus seeds are the 1st on the left. I've tried 5 different brands available on Amazon and of the 5, these are the worst. Highest price per ounce and lowest quality. They have a lot of germs, the bitter green sprout, inside. Its around 20% that need to have them removed. They are also the smallest of the seeds but they do appear to be a more juvenile seed. The good news is they produce a whiter seed when cooked which allows for a broader range of coloration
