Excellent Flour!
I am new to gluten-free cooking and wasn't sure what to expect, how this flour might bake up compared to regular flour or if there would be a taste difference. In addition to being gluten-free, my family only chooses organic/non-gmo foods. I called the company to make sure that their ingredients are sustainably sourced, especially the corn starch since most corn in the US is gmo. I spoke with Arvid (the nicest man in the whole world) who alleviated my concerns. Not only was he super honest about not having the USDA "organic" certification, but assured me the ingredients are indeed healthy og, non-gmo, and responsibly sourced. He even gave me tips on how to use this gluten-free all purpose flour in certain recipes, such a nice man! I used this flour to make a batch of waffles for the first time as gluten-free, and WOW, they were amazing! Exceeded my families expectations! I was going to post a photo but they were so delicious, we gobbled them up too quick! When I make a second batch I will try to get a photo to upload before they are all gone because they looked as good as they tasted! A bit denser than traditional waffles, but with a superior taste and will be wonderful frozen to toast later. I usually make a double batch to freeze because making your own is so much healthier than the gmo loaded pre-packaged frozen waffles you buy at the store. Plus, if you have gluten-free kids, these waffles make a great snack with any topping from peanut butter to melted cheese. I'm going to share my gluten-free waffle recipe below, the batch can be doubled to make extra ones to freeze, and some ingredients can be substituted for vegan, etc. My gluten-free waffles using Abundant Life Foods flour turned out amazing and I hope you like them too! :)Organic Gluten-Free Waffles2 Eggs (or you can use egg replacer for vegan)1/2 Cup Organic Sour Cream or Plain Yogurt (sub non-dairy yogurt for vegan)1/2 Cup Milk (almond, rice, hempmilk, etc., if vegan)1/2 tsp Vanilla1 Cup Abundant Life Foods All-purpose Flour1 Tbs Organic Coconut Sugar (or cane sugar)1 tsp Baking Powder (non-aluminum)1 tsp Baking Soda1/4 tsp. Sea Salt (fine ground)2 Tbs Coconut Oil - Melted (or sub butter or vegetable oil)Beat eggs in a large bowl til fluffy then add sour cream, milk, and vanilla beat well. Combine all dry ingredients in separate bowl. Add dry ingredients to egg mixture half at a time and mix together thoroughly (but don't overmix) then add in the melted coconut oil til blended. Batter will be thick. Drop approximately 1/2 cup dollop per waffle on a preheated waffle iron. Enjoy! We like ours with organic butter and real Vermont maple syrup! Cool completely before freezing to prevent sticking together.

Great for crackers
I'm a huge fan of Bob's Red Mill gluten-free flour, but wanted to try something new.This flour is PERFECT for homemade crackers. The crackers come out crisp and thin- but they go stale right away. You need to eat them right out of the oven. I'm not sure why. I use the same recipe with Bob's and don't have that issue.I've also used this as the binder for a mashed potato crust I use with quiche. It's not for bread- which it says on the package- so I haven't tried it with my drop biscuit recipe.

Fantastic Product
This G-F flour mix has it right on the button. I've used many G-F all-purpose only to find them dry, difficult to work with and simply terrible tasting. Not so with this product. I believe they have the right balance of the different flours that are used in the ingredients to make it act, feel, smell, and taste like the real thing. I used it the other day to make a pie crust - to me, the ultimate test. My husband and I were amazed at how delicious, flaky, and tender the pie crust turned out to be. I'm just delighted to have found this flour and will keep using it as this is now my gold standard of G-F flour mixes.

Nice product,l but be aware; for new non gluten bakers, this is mostly rice flour and it absorbs a lot,l I mean a lot, more liquid than wheat flour. But, once you adjust to that, it is a great flour.
