HNF362 comes in a N1 (indoor) enclosure. the HNF362R is the N3R (outdoor version).

Q: Is this switch equipped for red, black, white and ground wire connections? Will it lug to #8 wire?

All switches are supplied with factory installed line and load lugs, neutral Part# HN623 & ground Part#HG61234 kits can be purchased separately. Q: Is this for 60 amp per pole or 60 amp total?

This will be 60 amp per pole. anytime you have a multi pole breaker, fuse, or switch the rating is per pole but you do not combine the total. for example a 200 amp 2 pole residential breaker will protect the wire or circuit for 200 amps per leg or line and trip to shut off both poles in an overload or ground fault that occurs on any one or both of the poles . That is why there is a pin connecting the switches on multi-pole breakers and three phase breakers only have one switch, if there is a fault it shuts off all the hot legs on that circuit.. A disconnect switch regardless of the rating is just a switch, but is rated for the amount of current it can safely handle whether it is a single pole light switch for a residential bulb or 2 or 3 pole switch but will not regulate excess current in the event of a fault.
