Q: Hello, I only received 1 defrost switch

Most refrigerators that have only (1) freezer compartment, will only have (1) Defrost Thermostat Switch.

Q: While this isn't designed for a GE fridge, the open/close temps are very close. This is just a switch that open/closes with temps so will it work?

The switch is controlling a heating element in an enclosed space containing plastics, styrene and perishable food, the engineers designed the defrost cycle to behave in a certain way, maximizing frost removal while minimizing defrosting of food at a given set of temperatures. I would recommend that getting a replacement that is an exact match for temps. It might work, but if it fails the consequences are not trivial in many scenarios. I will say that this unit has performed in my application without problem since install.

However, in most cases the common function of the Thermostat are all basically the same. You're going to have to take apart you freezer panel where the cooling coils are located and look at the wiring in order to determine if the part can be terminated/installed without making major or minor modifications. As far as if it can physically fit, if there's room, then yes. However, I'm also assuming your issue or major problem is that your freezer is icing up to much and won't defrost, right?
