Q: Does this need an update before being put into a PS5?

No. Just open packet. Unscrew back of PS5 and slot in. Rescrew back if PS5 on and off you go. SIMPLES.

Q: Can this be used as an external hard drive if put in a case?

Should be fine in a M2 external enclosure. If it will get heavy use you might need an aluminium case to help keep it cool.
